Very Easy Enchiladas


1 lb ground beef
3 c salsa (your favorite)
1 c shredded cheese (cheddar or Mexican blend)
12 to 16 corn or flour tortillas


Brown ground beef. Add 1 cup of the salsa and heat through. Then remove pan from heat.

Spoon about 2 tablespoons of meat mixture on tortilla, then sprinkle with cheese and roll up. Place fold side down in a baking dish. Repeat until all the meat has been used.

Top enchiladas with rest of the salsa and cheese and bake in a preheated 350 degree oven for 10 to 15 minutes, or until edges of enchiladas are crisp and browned.
