Tomato Basil Salmon


2 tomatoes, coarsely chopped
3 TB chopped fresh basil
1 TB olive oil
1/2 tsp salt
1/2 tsp pepper
4 (6oz) salmon filets, skinless preferable
4 TB freshly grated Parmesan cheese


Preheat oven to 400 degrees. line a baking sheet with foil and spray cooking spray on the foil.

Toss tomatoes, basil olive oil, salt and pepper together in a small bowl. Put salmon on prepared baking sheet and top with tomato mixture. Sprinkle with Parmesan cheese. Bake until salmon is opaque in center and cheese is melted and lightly browned, about 10 to 12 minutes.

Can serve with whole basil leaves as garnish.
