4 to 6 boneless chicken breast halves
2 tsp paprika, divided
3/4 tsp salt
1/8 tsp black pepper
2 TB olive oil, divided
1 medium onion, cut into thin wedges
1 can diced tomatoes, undrained
1 can garbanzo beans (chickpeas), drained and rinsed
1/3 c raisins
1/4 tsp cinnamon
DirectionsSeason chicken with 1 teaspoon paprika, salt and pepper. Heat 1 tablespoon of the oil in a large nonstick skillet on medium-high heat. Add chicken; cook 6 minutes or until browned on both sides. Remove chicken from skillet; set aside.
Heat remaining tablespoon oil in skillet. Add onion, cook and stir 3 minutes. Stir in tomatoes, garbanzo beans, raising, remaining teaspoon paprika and cinnamon. Bring to a boil. Reduce heat to low; simmer 5 minutes. Return chicken to skillet. Cover and simmer 6 to 8 minutes or until chicken is cooked through. Serve with couscous or rice.
