Stovetop Chicken Parmesan


2 chicken breasts, halved
1 egg, beaten
1 c pork rinds, crushed
1/2 c shredded Parmesan cheese
olive oil
1/4 c grated fresh Mozzarella cheese
1/8 c fresh basil, chopped
tomato sauce, heated


Place egg in one dish.
Combine pork rinds and Parmesan in another.
Heat oil in a skillet over medium-high heat.
Season chicken breast halves with salt and pepper.
Dip each chicken breast half in egg, then in pork rinds and Parmesan mixture. Make sure both sides are coated with breading.
Cook in skillet until done, about 4 minutes per side.
Remove and keep warm.
Meanwhile, make pasta according to package directions.
When assembling the dish, place some of the heated tomato sauce on the plate, then top with chicken breast half. Toss pasta with remaining tomato sauce, and top with Mozzarella and basil.
Serve immediately.
