2 TB butter, softened
4 slices white bread
4 slices cheese of your choice, but sharp cheddar works best
1 Roma tomato, thinly sliced
2 TB finely chopped onion
1 jalapeno pepper, finely chopped
DirectionsHeat a large skillet over MEDIUM heat. Spread butter on one side of each bread slice and transfer, buttered side down to skillet. Lay 1 slice cheese on each, and top evenly with tomato, onion and jalapeno. Top with remaining slices of cheese, then remaining bread slices, buttered side up.
Cook until toasted and golden, about 1 to 2 minutes per side.
