Spaghetti and Meatballs with No-Cook Tomato Sauce


8 oz whole wheat or whole grain spaghetti
4 c chopped tomatoes (about 11/4 lbs)
1 c fresh basil, chopped
3 cloves garlic, minced
3 TB extra virgin olive oil
16 fully cooked meatballs, turkey, chicken or beef
1/4 grated Parmesan cheese


Cook spaghetti according to package directions.
Combine tomatoes, basil, garlic and 2 tablespoons oil in a medium bowl.
Heat the remaining tablespoon of oil in a large skillet over medium-high heat. Add meatballs and cook, until starting to brown. Remove from heat; add the tomato mixture and toss to coat.
Serve the spaghetti with the meatballs and sauce, topped with Parmesan. Garnish with more basil, if desired.
