Simple Bruschetta


French bread, sliced
olive oil
fresh tomatoes, diced
fresh basil, chopped
fresh mushrooms, diced
fresh garlic, minced
sea salt


Place tomatoes, basil and mushrooms on a baking sheet. Drizzle with olive oil and roast in an oven until heated through and tender, just a few minutes.
Spread onto bread, add a bit more olive oil and sea salt, if desired and serve.
Alternatively, you can drizzle oil on bread slices and rub with garlic, bake in oven until toasted then remove, add toppings and serve, or roast another minute or two until toppings are heated through, tender and fragrant.
