Shrimp Quiche


3/4 lb shrimp, cooked and chopped
1/4 c green onion, tops included, chopped
1/4 c butter
4 eggs, well beaten
1 1/2 c heavy cream
1 tsp salt
1/8 tsp dry mustard
1/8 tsp nutmeg
1 c mozzarella cheese, shredded
1 pie shell, unbaked


Chop shrimp. Cook onions in butter until tender.
In large bowl, combine eggs, heavy cream, salt, dry mustard, nutmeg and cheese. Add cooked green onions and fold in shrimp to the mixture. Pour into pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 300 degrees and continue to bake 30 minutes until knife inserted in center comes out clean. Let stand 5 minutes before serving.
