Santa Fe Corn Chili


1 lb ground beef
2 cloves garlic, minced
1 can kidney beans, drained and rinsed
1 can sweet corn, drained
1 (15oz) can tomato sauce
1 can diced green chilies and tomatoes, such as Rotel, undrained
1 pkg chili seasoning mix (do not use taco seasoning)
sour cream, green onions, green chili sauce, cheese for garnish


Brown beef and garlic in skillet until no longer pink. Drain excess fat and place in slow cooker. Add remaining ingredients except the garnishes and stir. Cook on high for 45 minutes, low for 1 1/2 hours until well heated through and flavors are melded together.

Serve with garnishes if desired.
