Santa Fe Barbecue Chicken


2.5 lbs Premium Chicken Breasts
1 Large Orange Bell Pepper
One Regular size Bottle of OLD WEST or your favorite BBQ Sauce
1 Large Red Onion
1/2 bunch Fresh Cilantro
1/2 Bunch Fresh Green Onion
2 Limes
3 Table Spoons of quality Butter
Avocado Oil
Kosher Salt & Course Ground Pepper to taste


To prepare your dish, first preheat two large Saute pans (Med High) and
lightly coat the bottom of the pans with 3 - 4 tablespoons of Avocado
Oil. Next wash your Orange Bell Peppers, remove stem and seeds from the
pepper and then remove the skin from your Red Onion. Slice and cut your
peppers and onions "Country-style" or "Grandma Style, into Quarter size
square pieces. Add to your preheated pan oil and saute for 7 -10 minutes
or until slightly golden (please make sure your veggies are cooked with
just a little "bite" to them). Slice your fresh or thawed Premium
Chicken into Fajita-style strips and saute until almost cooked, set
aside to rest while sauteing your peppers and onions. Combine chicken
and veggies with your favorite BBQ Sauce and let simmer on low for five
minutes or until your chicken is cooked through. Finely chop your fresh
cilantro and green onion (be sure to remove ends and thinly slice). Add
your butter to the pan. Cut one fresh lime in half and squeeze the juice
directly into your Santa Fee BBQ dish, at the very end finish with your
chopped fresh herbs and sliced green onions, gently stir to combine.

Plate your dish while hot and fresh and serve with buttered white corn
tortillas, and your favorite Southwestern rice dish or salad. Garnish
with sliced lime and Enjoy!
