Roasted Chicken Thighs with Radishes


6 chicken thighs
1 1/2 lb radishes, trimmed and halved lengthwise
3 TB extra virgin olive oil
2 TB Everyday Spice Blend (recipe below)
6 c baby arugula
kosher salt

Everyday Spice Blend
1TB kosher salt
1TB black pepper
1 tsp cumin
1 tsp fennel
1/2 tsp red pepper flakes
1 tsp rosemary
1 tsp garlic granules or garlic powder
1 tsp paprika


For spice blend, mix all ingredients until well-combined. Store in a cool, dry place.

For chicken, preheat oven to 450 degrees.
Toss together the chicken thighs, radishes, olive oil and spice blend in a bowl. spread in a single layer on a rimmed baking sheet.
Roast until internal temperature reaches 160 degrees F, about 30 minutes.
Divide arugula evenly among 6 plates.
Top with chicken and radishes and pan juices. Sprinkle with kosher salt.
