Preparing Prime Rib


1/2 cup prime rib rub per 6 pounds of prime
2 cups water for 6 pounds of prime


Rub ribeye roast with rub until completely covered. Place fat side down in a baking pan and cover, marinate in a refrigerator overnight.
Preheat oven to 300 degrees.
Pour water in a metal pan and place on the bottom rack of the oven.
Place prime rib in its own pan on center rack and cook, uncovered for one to two hours or until meat thermometer inserted in center reads 140 degrees.
When desired temperature is reached, turn oven off and let prime rib rest in oven for 15 minutes.
Remove and carve; serve with drippings.
