Picadillo



Ingredients

1 lb ground beef or pork or buffalo
1 large onion chopped
1 16oz can tomatoes, peeled and chopped, plus liquid
2 TB vinegar or red wine
1 tsp cinnamon
1/8 tsp ground cloves
1/4 tsp cumin
1 tsp chili powder
1/2 c raisins
1 12oz can whole kernel corn
1 4oz can chopped green chilies, drained
1 4oz can chopped black olives
1 c grated sharp cheddar cheese

Directions

Brown the meat. Add the onion and sauté until softened. Pour off any excels fat (important!).
Add the remaining ingredients except the cheese. Bring to a boil, then reduce heat and simmer, covered for 1 to 20 minutes.
Add grated cheese and simmer for an additional 10 minutes. Top with additional grated cheese when serving, if desired.
