Microwave Beef Enchiladas


1/2 lb ground beef
2 TB chopped onion
2 c shredded Taco cheese, divided
1 can enchilada sauce, divided
1 TB chopped green chilies
6 small tortillas, warmed
shredded lettuce and sour cream, if desired


Crumble beef in a 2 quart microwave-safe dish; add onion. Microwave, covered on high until beef is no longer pink, just 2 to 3 minutes; drain. Stir in 1 cup cheese, and a quarter cup enchilada sauce and the green chilies.
place about a half cup of the beef mixture in the center of each tortilla. Roll up and place in a greased microwave-safe dish, seam side down. Top with remaining enchilada sauce.
Microwave, covered, on high until heated through, 5 to 6 minutes. Sprinkle with remaining cheese. Cook, uncovered, until cheese is melted, 1 to 2 minutes longer.
Top with lettuce and sour cream, if desired.
