Kitchen Sink Chili


2 lbs lean ground beef
1 large yellow onion, finely chopped
3 cloves garlic, minced
1 can diced tomatoes with green chilies
2 cans (8oz) tomato sauce
1/2 c beef broth
2 TB chili powder
2 tsp ground cumin
2 tsp paprika
2 tsp cocoa powder
1/2 tsp coriander
salt and pepper to taste
1 (15oz) can light red kidney beans
1 (15oz) can dark red kidney beans
shredded cheddar cheese


Brown ground beef until no long pink. Drain and set aside.
In the drippings, cook onion and garlic until translucent. Combine with beef and place in the bottom of a crockpot.
Add remaining ingredients except the beans and cheese and stir to combine. Cook on low for an hour or two then add kidney beans - make sure they're rinsed and drained - and cook for another 15 minutes.
You can leave out the beans, if desired.
Serve with cheddar cheese.
