Ham and Cheese Muffins


2 c flour
1 TB baking powder
1 1/2 c fully cooked finely diced ham
1 1/2 c grated cheddar cheese
1 c buttermilk
1 egg
1/4 c vegetable oil
bacon bits or chopped cooked bacon


Preheat oven to 350 degrees.
In a large bowl, stir together the flour and baking powder; stir in the ham and cheese; set aside.
Whisk together the buttermilk, egg and oil in a small bowl. Stir the egg mixture into the dry ingredients just until combined. Do not over mix.
Fill prepared muffin cups about two-thirds full. Sprinkle with bacon bits
Bake for 20 minutes or until golden brown and a toothpick checks clean.
Remove from muffin tin and cool on wire rack.
