2 potatoes, well-scrubbed
1 onion, thinly sliced
good olive oil
salt and pepper
heavy duty aluminum foil
1/4 c cheddar cheese, shredded
DirectionsThinly slice potatoes. In a bowl, add to sliced onion. Drizzle with olive oil (no more than 1/8 c), and season with salt and pepper.
Pour onto a piece of heavy duty aluminum foil. Fold ends over to enclose and crimp shut.
Grill on a hot flame until potatoes are tender, about 20 minutes.
Top with cheddar cheese just before serving.
