Greek Shrimp Salad


2 lb shrimp, cooked and peeled
1 tsp red pepper flakes
2 scallions, chopped
1 small red onion, chopped
1 celery rib, chopped
24 cherry tomatoes, halved
1 tsp oregano
2 TB olive oil
1 TB lemon juice
1 TB red wine vinegar
1 tsp sugar


Sprinkle shrimp with red pepper flakes. Add scallions, onion, celery and tomatoes. in a small bowl, whisk together oregano, olive oil, lemon juice, red wine vinegar and sugar. Pour over shrimp mixture. toss well. cover and refrigerate until ready to serve.
