Gazpacho



Ingredients

4 c tomato juice
1 onion, minced
1 green pepper, minced
1 cucumber, chopped
2 c chopped tomatoes
2 green onions, chopped
1 clove garlic, minced
3 TB fresh lemon juice
2 TB red wine vinegar
1 tsp dried tarragon
1 tsp dried basil
1/4 c chopped fresh parsley
1 tsp white sugar
salt and pepper to taste

Directions

In a blender, combine all ingredients. Blend until well-combined bust still slightly chunky. Chill at least 2 hours before serving.
