Easy Cherry Cobbler


1 can tart red cherries, undrained
1 c flour
1 1/4 c sugar, divided
1 c milk
2 tsp baking powder
1/8 tsp salt
1/2 c butter, melted
vanilla ice cream or whipped cream, optional


Preheat oven to 400 degrees.

Bring cherries to a boil in a saucepan over medium heat; remove from heat.

Mix flour, one cup sugar, milk, baking powder and salt in a medium bowl. Pour butter into 6 one-cup ramekins, or in the bottom of a pie dish. Pour batter on top, then top with cherries. DO NOT STIR. Sprinkle remaining 1/4 c sugar on top.

Bake for 30 minutes or until done.

Serve with ice cream or whipped cream, if desired.
