2 to 3lb corned beef brisket with pickling spice packet
1 yellow onion, peeled and cut into wedges
2 c beef broth
1 (15oz) bottle Stout beer
1/2 red onion, sliced
DirectionsPlace yellow onion wedges in bottom of crock pot. Rub pickling spice over corned beef brisket (if no packet, use store-bought pickling spices found in the spice aisle). Place brisket on top of onion wedges.
Carefully add broth and wine, being careful not to wash off the pickling spices. Top with red onion sliced.
Cook on low for 9 hours or high for 4 hours or until a meat thermometer inserted in the center reads at least 145 degrees Fahrenheit. Corned beef can be tricky to determine if done because it maintains its red color, so using a cooking thermometer is highly recommended!
