1 or 2 chicken breasts, cut into pieces
2 or 3 TB olive or vegetable oil
16 pepperoni slices, cut in half
1 small green pepper, julienned
1 small onion, sliced
12 tsp dried oregano
12 tsp dried basil
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
1 tomato, diced
1/2 c shredded mozzarella cheese
DirectionsIn a fry pan, sauté chicken breast pieces until juices run clear.
In a large bowl, combine the next 9 ingredients and add the chicken pieces. coat two large pieces of heavy-duty foil with nonstick cooking spray. Place half the mixture in the center of each tin foil piece. fold foil around the mixture and seal tightly. Grill, covered over medium high heat for about 20 minutes.
Carefully open each packet and sprinkle with tomato and cheese. Seal loosely and grill another 2 minutes.
