Buttery Shrimp with Peppers


1 lb shrimp (cooked or raw, tail on)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 clove garlic, minced
1 TB olive oil
2 TB butter
salt and pepper
1/2 c chopped parsley


Sauté garlic and sliced bell peppers in olive oil until softened. Season with salt and pepper. Add shrimp (if raw - see note). Add butter and stir until combined and heated through.
Top with parsley and serve over rice or pasta, if desired.

NOTE: if using raw shrimp, sauté in olive oil with garlic and remove, then add peppers and later return shrimp to skillet after peppers are softened.
