2 1lb buffalo tenderloins (can use beef)
1 tsp salt
1/2 tsp pepper
1 c beef broth
3 TB barbecue sauce
1/4 tsp or more hot sauce
2 tsp cold butter
2 TB vegetable oil
DirectionsSprinkle tenderloins with salt and pepper.
Stir together broth, barbecue sauce, hot sauce and a dash of pepper in a bowl. Add butter to broth mixture but do not stir.
Heat oil in a heavy skillet over high heat until it just begins to smoke, about 1 minutes. Sear tenderloins, turning once, about 1 to 2 minutes per side for medium-rare. Transfer to a plate and tent with foil to keep warm.
Pour broth mixture into skillet and bring to a boil. Cook, stirring occasionally and scraping up browned bits from bottom of skillet., until liquid had thickened slightly and reduced to about 3/4 cup, about 4 minutes. Remove from heat and serve tenderloins with sauce.
