Broccoli-Cheese Corn Bread



Ingredients

2 boxes corn muffin mix
2 sticks butter
4 eggs
1 (10oz) package frozen chopped broccoli, thawed and drained
1 (12oz) carton cottage cheese (use small curd)
1/2 c finely diced onion

Directions

Melt butter. Add to muffin mix in a bowl, then add eggs and stir well by hand. add thawed broccoli, cottage cheese and onion. Stir well. Pour into a buttered baking pan. Bake in a preheated 350 degree oven for 2 to 30 minutes or until golden brown on top.
