Black-Eyed Pea Casserole


1 lb lean ground beef
1 small onion, finely chopped
1 small green pepper, finely chopped
1 clove garlic, minced
2 cans black-eyed peas, drained and rinsed
1 (16oz) can stewed tomatoes
2 c cooked rice
salt and pepper to taste
1 c shredded sharp cheddar cheese


Saute meat, bell pepper, onion and garlic until meat is no longer pink. Add black-eyed peas and tomatoes. Stir to combine.
Place rice in the bottom of a casserole, top with meat mixture.
Top with cheese.
Bake in a preheated 325 degree oven for 30 minutes
