Black-Eyed Pea Casserole


1 lb ground beef
1 small onion, chopped
1 small green pepper, chopped
1 clove garlic, minced
2 cans black-eyed peas, drained and rinsed
1 (16oz) can stewed tomatoes
2 c cooked rice
1 c shredded cheddar cheese
salt and pepper


Sauté meat, bell pepper, onion and garlic. Add peas and tomatoes. Place rice in 9 x 13 inch casserole. cover with meat mixture. Add grated cheese. Bake at 325 degrees for 30 minutes.
