Beef and Cheddar Quiche


3/4 lb ground beef
1 pie shell
3 eggs, slightly beaten
1/2 c mayonnaise
1/2 c half and half
1/2 c chopped onion (or 1/4 c each bell pepper and onion)
4 tsp cornstarch
1 tsp salt
1/2 tsp pepper
2 cups shredded cheddar cheese (divided)


In a large skillet, cook the beef until no longer pink. Drain.
Place beef in a large bowl. Add the eggs, mayonnaise, half and half, onion, cornstarch, salt, pepper and 1 cup cheese. Combine and pour into crust. Bake in a preheated 350 degree oven for 35 to 40 minutes or until a knife inserted near the center comes out clean.
When done, remove from oven and sprinkle with remaining cheddar cheese. Serve warm.
