1 lb ground beef
1/2 c finely chopped red onion
1 tsp oregano
salt and pepper
1 pint grape tomatoes, halved
1/4 c chopped fresh basil or Italian flat leaf parsley
4 10-inch flour tortillas
4 TB olive oil
2 tsp dried basil
1/2 c mozzarella cheese
1/2 c parmesan cheese
red pepper flakes for garnish
DirectionsBrown beef with onion. Drain excess dripping.
Return to the skillet and season with salt, pepper and oregano.
Meantime, preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Place a tortilla on the paper and brush with 1 tablespoon of olive oil.
Sprinkle with dried basil. Put a few spoonfuls of the meat mixture in the center, then top with tomato pieces and fresh basil or parsley.
Top with cheeses and bake for 12 to 14 minutes or until cheese is melted and tortilla is browned on the edges and crisp.
Garnish with red pepper flakes.
Repeat with the other 3 tortillas.
