Beef Breakfast Bake


1 lb lean ground beef
6 eggs
1/4 c milk
1 c shredded cheddar cheese
salt and pepper
mixed finely diced vegetables, such as tomatoes, onion, green pepper or mushrooms


Preheat oven to 425 degrees.
Brown ground beef. Drain and set aside.
Beat eggs; add milk and salt and pepper and beat until combined.
Pour egg mixture into greased muffin tins (can use a 12-tin muffin pan).
Then evenly add beef, vegetables then top with cheese.
Bake for 15 minutes.
