Beef & Blue Cheese Stuffed Mushrooms


1/2 lb ground beef
1/4 tsp salt
36-40 small button mushrooms
1/3 c crumbled blue cheese
1/4 c bread crumbs
3 TB chives, minced
1/2 tsp steak seasoning
additional minced fresh chives (optional)


Preheat oven to 375 degrees.
Remove and reserve stems from mushrooms. Season mushroom caps with salt; set aside. Mince stems to yield 1/2 cup.
Combine ground beef, minced stems, blue cheese, bread crumbs, chives and steak seasoning. Spoon beef mixture evenly into mushroom caps.
Place stuffed mushrooms on rack in broiler pan. Bake 15 to 20 minutes. sprinkle wit additional chives, if desired.
