Basil Pesto Tuna Fish Sandwich


Basil Pesto:
1 to 2 garlic cloves
1/2 tsp salt
3 TB pine nuts
3 c loosely packed basil leaves
1/2 c extra virgin olive oil
1/2 c grated Parmesan cheese

2 cans tuna in water, drained
2 TB mayonnaise
2 TB basil pesto
1 TB mustard
2 cloves garlic, minced
8 basil leaves (or lettuce leaves)
1 large tomato, sliced
8 slices bread, preferably rye


For the pesto, in a blender or food processor combine garlic, salt and pine nuts; cover and process until finely chopped. Add basil and olive oil; puree until smooth. Add cheese and process until just combined.

For the sandwich: mix together tuna, mayonnaise, pesto, mustard and garlic in a bowl. Layer tuna mixture, basil (or lettuce) and tomato evenly over 4 bread slices. Top with remaining 4 bread slices.
