Baked Zucchini and Potatoes


4 c zucchini, cut into bite-sized pieces
4 red potatoes, quartered
4 small onions or shallots, peeled and cut in half
1 red bell pepper, chopped
2 cloves garlic, sliced
1/4 c olive oil
1/2 c Italian style bread crumbs
1 tsp paprika
salt and pepper to taste


Combine all ingredients in a bowl. Make sure all the vegetables are coated with the oil and bread crumbs.
Transfer to a baking dish and bake in a preheated 400 degree oven for 45 minutes to an hour or until vegetables are tender.
Be sure to use a dish not a flat baking sheet so all the flavors can cook together.
