RAPID CITY, S.D. (KOTA) - In Texas caviar isn’t fish eggs, it’s black eyed peas!
The boys at 307 Real Estate help my whip up a Texas favorite! Texas Caviar - a delicious, cool summer treat!
Here’s the recipe: In a large bowl, combine 1 can of black eyed peas, drained and rinsed with 3 tablespoons chopped pimientos, drained. Then add a finely chopped small tomato and 1 jalapeno chili, seeded and minced. Then you’re going to add 1 1/2 tablespoons of chopped fresh parsley and a tablespoon of olive oil. Add a teaspoon of Worcestershire sauce and a teaspoon of balsamic vinegar. You’re not done yet - add a half teaspoon of hot pepper sauce and a dash or two of salt. And you can sprinkle some pepper in, too.
After thoroughly combined, drizzle with some extra balsamic vinegar. Correct seasonings then chill until ready to serve.
