Cooking Beef with Eric - Steak and Potato Hash
RAPID CITY, S.D. (KOTA) - Pan-fried potatoes, eggs and tomatoes. And, oh yes, some sirloin and eggs ... a delicious breakfast!
First, cook a 1lb sirloin steak in a skillet until medium rare, about 3 minutes per side. Remove steak from pan but keep drippings. After steak rests 10 minutes, cut into cubes.
In those drippings, cook a pound of potatoes cut into pieces. You may need to add a bit of butter. Season with salt and pepper. Cook until crisp tender, about 12 minutes.
Then add a chopped sweet onion and a cup of cherry or grape tomatoes, halved. Stir and cook until tomatoes burst. Turn heat to low, return steak to pan. Make 4 indentations in the mixture and drop an egg into each one; season with Italian seasoning, cover pan and cook until egg whites are set. This dish is best if eggs are prepared sunny side up.
