Cooking with Eric - Chicken with Chickpeas and Spinach
RAPID CITY, S.D. (KOTA) - Here’s something new for you! While the entirety of this dish is amazing, sautéing the chicken breasts in zesty Italian dressing takes the flavors over the top!
First, in a blender combine 1/3 cup chicken broth (low sodium is best) with a half cup of canned chickpeas (drained) and 6 ounces of cream cheese, softened. Sprinkle in 1/4 tsp cayenne pepper. Blend until smooth. Set aside.
Meantime, heat `1/4 cup of Zesty Italian Dressing in a skillet. Place 6 thin-cut chicken breasts in the skillet and cook over medium high heat on all sides, turning occasionally, until done (about 8 minutes total). Pour cream cheese mixture over chicken and add the rest of the chickpeas and a package of fresh spinach leaves. Stir in one 8oz package of diced cooked ham. Make sure everything is well-combined in the skillet; cover and simmer on low heat for 10 to 15 minutes or until spinach is wilted.
