Cooking with Eric - Baked Rockfish with Parmesan-Sour Cream Sauce
RAPID CITY, S.D. (KOTA) - I know many of you are afraid of cooking seafood. It can really be quite easy, and many recipes don’t have too many ingredients. Like this one for Rockfish, which I picked up at Dakota Seafood in Rapid City.
First, preheat oven to 350 degrees. in a single layer in a lightly greased 9″x13″ pan, place 1 1/2 lbs of rockfish fillets. If you can’t find rockfish, flounder or tilapia works great, too, or orange roughy.
Next, in a bowl stir together an 8oz carton of sour cream with 1/4 cup shredded Parmesan cheese. Then add a half teaspoon of good paprika (Hungarian or Spanish) and 1/4 teaspoon pepper. Don’t forget a half teaspoon of salt, or seasoned salt. Pour mixture over fish and spread evenly.
Finally, sprinkle some Italian flavored breadcrumbs on top and drizzle with 2 tablespoons of melted butter. Bake until bubbly and fish flakes, about 25 to 30 minutes.
Can sprinkle with finely ground parsley flakes when serving, if desired.
