Cooking Beef with Eric - Stuffed Pepper One Pot Meal
RAPID CITY, S.D. (KOTA) - Love the taste of stuffed peppers? Here’s a recipe where you get all those flavors but you don’t have to actually stuff a green pepper - easy peasy!
First, brown a pound of ground beef; drain excess grease. In the same pan, add 3 chopped green peppers and 3 cloves of minced garlic; sauté until peppers are softened.
Next, add two cans of Italian flavored diced tomatoes, un-drained. Also add a can of tomato paste and 2 cups of water. You’re also going to add 1 cup of uncooked Instant Rice (must use Instant) and 3 tablespoons of grated Parmesan cheese. Bring to a boil then remove from heat, cover and let stand for at least 5 minutes or until rice is cooked.
When serving, top with more Parmesan cheese.
