Cooking with Eric - Impossible Meat Pie
RAPID CITY, S.D. (KOTA) - This recipe comes from Dave McMillin, in the Martin Volunteer Fire Department’s “Burnt Offerings” cookbook.
First, preheat your oven to 400 degrees.
Grease a pie plate. Combine 2 cups cooked meat (ham, chicken, tuna or ground beef), 1 1/2 cups milk, 1/2 cup finely chopped onion, a half teaspoon of salt, 3 eggs, a cup of shredded sharp cheddar cheese and 3/4 cup Bisquick or favorite baking mix. Pour mixture into pie plate and bake for 35 to 40 minutes, or until a knife inserted in the center comes out clean. Cool at least 5 minutes before slicing and serving.
