Cooking Beef with Eric - Dilled Corned Beef Dip
RAPID CITY, S.D. (KOTA) - We think of corned beef on St. Patrick’s Day, but we don’t always want to spend hours cooking a corned beef brisket! Turns out, we can use canned corned beef to make a whole host of delicious dishes, including this dilled corned beef dip for a St. Patrick’s Day gathering.
First, crumble a can of corned beef into the bottom of a bowl.
In a separate bowl, combine 1 1/2 c sour cream with 1 1/2 c mayonnaise. Add a third cup minced fresh parsley and 2 tablespoons of finely chopped white onion. Throw in 2 teaspoons of dill week and a half teaspoon of seasoned salt.
Add the sour cream mixture to the corned beef; toss and stir until well-combined. Top with shipped fresh dill week. Serve with crackers or vegetables.
