Cooking with Eric - Green Beans Milano
RAPID CITY, S.D. (KOTA) - I have been remembering my Great Aunt Virginia Maples ... she passed away a few years ago, but her recipes were always an inspiration to me. She was heavily involved in her church and had a large group of friends, so would prepare quite a bit of potluck-style food on a regular basis. Her recipes were loved because she had a knack of finding ways to make ordinary dishes much better with just a few ingredients.
Such a recipe is her Green Beans Milano. Here what you do: sauté a half cup of chopped onion with a minced garlic clove in a tablespoon of olive oil. Add a can of Italian style stew tomatoes, drained, but reserve a quarter cup of the juice because you will be dissolving a tablespoon of cornstarch in that juice then adding to the pan. Stir in 2 cans of Italian style green beans, or just steam some fresh of frozen green beans and add them to the pot. Finally, add a teaspoon of dried basil.
Simmer about 10 minutes and there you have it - an ordinary green bean side dish turned into something special.
