Mini Ham Loaves

1 20 ounce can sliced pineapple


4 cups ground ham

1 lb. ground pork

3 eggs

 ¾ cup milk

2 T. ketchup

2 cups graham cracker crumbs



1 cup pineapple juice

1 cup brown sugar

2 T. vinegar

1 T. mustard


Drain the pineapple, reserving the juice for the sauce. Arrange the pineapple rings in a 9x13-inch baking dish.  Combine the ham, ground pork, eggs, milk, ketchup, and cracker crumbs.  Mix well.  Shape into 10 mini loaves using about ½ cup for each loaf.  Place each loaf on a pineapple ring.

Combine the sauce ingredients in a small saucepan.  Heat, stirring to combine.  Pour sauce over loaves.  Bake at 325 degrees F. for 1 ½ hours.  Spoon sauce over loaves during the last 30 minutes of baking time.

Serve each ham loaf and pineapple ring over a bed of rice.

Makes 10 loaves.
