1 lb. ground beef
1 small head cabbage, cored and cut into small wedges
1 small onion, chopped
1 C. celery, sliced
1 C. carrots, sliced
1 C. zucchini, sliced
1 can (46 oz.) V-8 juice
1 C. brown rice, barley or bulgur
Pepper to taste
Brown ground beef; drain fat. Place in crockpot, top with vegetables, cover with V-8 juice and season with pepper. Cook for 4-6 hours on low setting. Add rice, barley or bulgur and cook 1 hour longer or until grain is cooked (allow 1 ½ hours to cook if using rice).
