1 Pound 80% Lean Ground Beef
½ Cup Seasoned Bread Crumbs
½ Cup Skim Milk
1, 8 oz Can Chopped Green Chilies
1 Package Taco Seasoning
TOPPING (or use your favorite salsa!)
1 Tomato - Chopped
½ Cup Green Onions - Finely Chopped
4 Tablespoons Salsa
1, 4 oz Can Diced Green Chilies
¼ Cup Cheddar Cheese - Grated
1) Combine ground beef and bread crumbs, mixing well. Combine milk, chilies and taco seasoning, mix well. Blend together both groups.
2) Place mixture in loaf pan. Bake uncovered 1 hour at 350 degrees (Meat should be cooked to a temperature of 160 degrees). Drain well, let stand 10 minutes and drain again.
3) Combine topping ingredients - except cheese. To serve, slice meat loaf, spread each serving with topping sauce and garnish with cheese.
