1 lb ground beef
12 to 14 Townhouse crackers, crushed
small bunch Italian parsley, finely chopped
2 TB Dijon mustard
salt and pepper to taste
Combine all ingredients except olive oil. Form into patties and refrigerate an hour or more before grilling, so they will remain "set."
Heat grill to high, place patties on grill and drizzle with olive oil. Cook until desired doneness, about 3 minutes per side and serve.
