Calebrese Burgers

1 ½ lbs ground beef
½ c finely chopped red onions
2 TB capers, drained
2 TB extra virgin olive oil
1 TB lemon zest
2 tsp oregano
1 TB tomato paste
1 tsp salt
1 tsp pepper
½ tsp red pepper flakes or cayenne

Sun-Dried Tomato Mayonnaise:

4 oil-packed sun-dried tomatoes, drained
2 tsp capers, drained
½ c mayonnaise
2 tsp fresh lemon juice
1 tsp oregano
few drops hot pepper sauce

For burgers, combine all ingredients until thoroughly mixed. But don’t over mix.

Form into patties. It is best to refrigerate patties an hour or so before grilling, so they ingredients will be set.

For mayonnaise, combine all ingredients in a blender of food processor until mixture is smooth. Store in refrigerator until ready to use.

Light a grill and cook burgers on high heat, about 3 to 4 minutes per side. Lather mayonnaise on some good quality buns, top with the burgers and any other condiments you like, such as a slice of mozzarella cheese.
