Spicy Vegetarian Summer Rolls


1 c mung bean sprouts
1 red pepper, julienned
1 yellow pepper, julienned
1 green pepper, julienned
6 rice papers
sesame oil
fresh ginger, grated
1 red onion, julienned

In a saucepan over medium heat, add sesame oil and onion, followed by peppers. Lastly, add bean sprouts, garlic and ginger. Then saute for about 1 minute and remove from heat. Let cool.

Once cooled, lightly toss in sriracha to taste. Briefly soak rice papers in water until soft. Then pat dry and fill with a small amount of mixture; fold both sides in and roll tightly.
