1 2/3 c flour
3/4 c warm water
1 1/2 TB olive oil
cornmeal, semolina or other course flour for dusting
1 1/2 tsp fast acting yeast
1/2 tsp salt
Place all ingredients in a bread machine and place on dough setting. Or place all ingredients in a mixer fitted with a dough hook. Mix just to combine and rest for 20 minutes. Knead with the dough hook for another 5 minutes. Cover and allow dough to rest for one hour. Or place all ingredients in a bowl and mix by hand just to combine and rest dough for 20 minutes. Knead for another 5 minutes. Pour a few drops of live oil onto your hands if dough is too sticky. Cover and allow dough to rest for one hour.
Place a large backing stone in the oven and preheat oven to 450 degrees.
Divide sough into two or three pieces and use a rolling pin, roll each piece on a floured surface into a 10-12 inch circle. Place rolled dough onto floured bread peel.
Top dough with desired ingredients and slide pizza onto the preheated backing stone.
Bake for 10- to 15 minutes until the crust is golden brown and the cheese is bubbly.
