Flank Steak with Roasted Root Vegetables


Flank Steak:

1 flank steak
1 tsp salt
1 tsp pepper
1 tsp garlic
1 tsp paprika
1 tsp onion powder

Combine spices in a small bowl.
Generously rub spices on and into the flank steak. Heat a lightly oiled pan over high heat until oil begins to smoke. Sear the flank steak for 4 minutes on one side. Then flip the steak and sear for three more minutes on the other side. Let the flank steak rest for 5 minutes then slice steak into thin strips against the grain. The flank steak should be served medium rare.

Roasted Root Vegetables:

2 carrots
1 turnip
2 parsnips
1 red onion
6 fingerling potatoes
garlic powder
fresh rosemary
dried thyme
olive oil

Clean rosemary by removing the petals from the stem and then rough chop. Next, mix your rosemary, garlic powder and thyme together in a small bowl. Cut all vegetables to the same size and toss in oil. Lightly season root vegetables with spice mixture. Lastly, lay the vegetables onto a sheet pan and roast at 400 degrees for 25 to 30 minutes.
