Beef Satay


Bamboo skewers

1 ½ pounds top round (sliced thin 1 inch width length to fit skewers)


2 teaspoons ginger minced

4 cloves garlic minced

½ teaspoon crushed red pepper

1 ¼ tablespoon curry powder

1 tablespoon honey

¼ cup fish sauce

¼ cup soy sauce

Peanut sauce

¾ teaspoon rice bran oil or peanut oil

1 teaspoon garlic minced

¼ teaspoon crushed red pepper

¼ cup coconut milk

½ lemons juiced

¼ cup creamy peanut butter

1 ½ teaspoon soy sauce

1/8 cup water

Soak skewers in water. Prepare marinade by mixing all ingredients in small saucepan. Heat medium high until it  boils. Remove at once and cool. Run meat onto skewers while cooling marinade. Move meat to Ziploc bag, add cooled marinade. Push air from bag covering all meat with marinade. Refrigerate overnight. Preheat grill or broiler oven while preparing peanut sauce. Combine the ingredients in small saucepan. Keeps sauce moving over medium heat with a wire whip. When it comes to a simmer, lower heat; simmer for 4 minutes or until sauce thickens. Grill or broil beef 2-3 minutes per side, medium rare to medium. Serve on warm platter or plates immediately with warm peanut sauce on the side.
